Exploring the nuances between splash decanting and the gentle breath of a resting magnum for older, more fragile vintages.
Decanting is less a ritual than a judgement call. For young, reductive wines a vigorous splash does real work. For a fragile forty-year-old Burgundy, the same treatment is a small act of vandalism.
